Oh how I love spanakopita. I haven't eaten it in years. I will have to remember that idea if I get a lot of summer spinach.

Crafty Cristy, I haven't eaten it in a while either. When I looked at all the spinach I had to harvest I knew I'd be making spanakopita! The fresh spinach really tasted amazing! Hope you get a chance to make some soon.
You are making me wishing that I had put my spinach seeds in the ground earlier! Looks delicious.
Prairie Cat, Not sure what zone you are in but I'd encourage you to grow some spinach anyways. Most take 45 days to mature and different varieties are cold tolerant or bolt resistant.
